We are passionate owners; whose retirement dream was to build a boutique hotel around a vineyard. We made this vision come true, in the Guadalupe Valley. During our first visit, we fell in love with the climate, the people, the landscapes, and above all, the high quality of the unique wines of this region. Mexican hospitality has always been at the heart of our enotouristic project, inspired by the love of wine, delicious food, and most importantly, the moments shared with loved ones. THE VINEYARD

El Cielo has 95 hectares of vineyards in which different grape varietals grow. There are 35 hectares in Valle de Guadalupe, 30 more in Valle de San Jacinto and 30 in Valle de Ojos Negros. This represents a density of more than 3,850 plants per hectare, which adds up to a total of 365,000 vines.

THE VARIETALS

White: Sauvignon Blanc and Chardonnay
Red: Cabernet Sauvignon, Cabernet Franc, Merlot, Tempranillo, Zinfandel, Grenache, Primitivo, Malbec, Syrah, Nebbiolo, Sangiovese, and Pinot Noir

THE WINERY

In our wine cellar, winemaking is done by the gravity system. We have the highest technology and quality equipment for the selection of grapes and wine production. Such as the automated bottling line (Costral Galaxy), grape selection equipment and press (Pellenc Selectiv Process Winery L), tangential filter (Bucher Vaslin FX3) and Analyzer Y15 for wine laboratory analysis.
Our winery was constructed with energy efficiency in mind; for this reason, the cellar is built underground, the roof and walls are insulated, the ceilings are tiled, and we have LED lighting.

ORGANIC GARDENING

We seek a high quality of products for our dishes. Therefore, we had the idea to create our crop fields and organic gardens, which have varieties of vegetables including chilies, cabbage, cilantro, celery, various types of lettuce, as well as figs, lemons, and oranges, among others.

Winemaking

For the winemaking process, we have conical trunk fermentation tanks made of stainless steel, brought from Spain and Italy.

Barrels

For the process of aging, we use 500-liter barrels made from French oak for integral micro vinification and 220-liter barrels made from French and American oak, achieving the integration of the aromas and tannins provided by the beautiful woods to create wines of the highest complexity and elegance.
